2017 Cabernet Sauvignon

Blue/black fruit notes ranging from plum to blackberry and mulberry are enhanced by complex notes of mint, brown sugar, freshly cut cedar and subtle truffle. The texture is rich and balanced, with an unctuousness in the mouth, balanced acidity and silky tannins throughout the middle and finish of the wine.

This incarnation of our Cabernet Sauvignon is a classic example of Mountain Cab: concentrated and layered with exotic complexity that emerges just beyond its fruit-driven intro. 27 lots of cabernet were night-harvested and transferred to individual fermentation vats, where they were cold-soaked for several days before being gently warmed for fermentation. After 20 days on skins, the wines were drained to French oak barrels, 50 to 60% new, where they were aged as separate wine lots for the next nine months. In August of 2018, pre-blending began, followed by an additional 11 months of barrel aging before the final additions were made to the blend: 5% petit verdot for spice and acidity, and 2.5% merlot for roundness and red fruit accents.

    More blackcurrant, cassis, tobacco, and damp earth notes emerge from the 2017 Cabernet Sauvignon, another medium to full-bodied, balanced, elegant wine in the lineup. With wonderful purity of fruit and a seamless, sumptuous style on the palate, give bottles a year or so and it's going to drink nicely for 10-15 years.
